Summer Corn Salad

Summer Corn, Black Bean & Feta Salad

Ingredients:
2 cups fresh sweet corn (about 3–4 ears, kernels cut off)
1 (15 oz) can black beans, drained and rinsed
1–2 fresh jalapeños, finely diced (seeds removed for less heat)
1 red bell pepper, diced
½ small red onion, finely diced
½ cup crumbled feta cheese
¼ cup chopped fresh cilantro (optional, but so good!)
Juice of 2 limes
2 tablespoons olive oil
Salt & black pepper to taste
Instructions:
In a large bowl, combine corn, black beans, jalapeños, bell pepper, and red onion.
Drizzle with lime juice and olive oil. Toss gently to coat everything evenly.
Add feta and cilantro, then lightly toss again.
Season with salt and pepper to taste.
Chill for 30 minutes if you’d like it extra refreshing — or serve immediately!
Tip: This salad is delicious as a side for grilled meats, tacos, or scooped up with tortilla chips. It’s the ultimate easy summer dish!
