This traditional Indian dessert is a warm, comforting, and slightly spiced pudding that highlights the natural sweetness of carrots. Perfect for cozy winter evenings!
Ingredients:
4 cups grated carrots
2 cups whole milk (or plant-based alternative)

1/2 cup sugar (adjust to taste) Tip: Try a couple Tbs of honey and the rest sugar.
1/2 tsp ground cardamom
1/4 cup chopped nuts pistachios and/or almonds
2 tbsp raisins (optional)
1/4 cup sweetened condensed milk (optional, for extra richness) or coconut milk
Instructions:
In a heavy-bottomed pan, heat ghee over medium heat. Add grated carrots and sauté for 5-7 minutes until they soften and are aromatic
Pour in the milk and cook on low heat, stirring occasionally, until the milk reduces and thickens (about 20-25 minutes).
Add sugar and continue to cook, stirring frequently, until the mixture thickens further and the carrots become glossy.
Stir in cardamom powder, condensed or coconut milk (if using), nuts, and raisins.
Cook for another 5 minutes, then remove from heat.
Serve warm, garnished with extra nuts.
