Each week I search cookbooks, magazines, and the internet and plan out 5 main meals. These meals have been tested and adaptations and tips are provided when needed. I'm here to help make Bringing Back Dinner to your home go a little more smoothly.




Sweet Potato Curried Soup - The Minimalist Baker

Vegan

Serves: 4

Time: 50 Minutes

Easy


During the cooler months we have a soup-a-week as a tradition and this soup is on repeat in our home.

Tips:

  • I like to keep a bag of frozen sweet potatoes in the freezer that way I don't have to worry about my potatoes going bad.

  • You can use butternut squash too.

 

Buffalo Chicken Lettuce Wraps - Bringing Back Dinner

Serves: 4

Time: 15- 45 minutes

Easy


This is a super easy dish and can potentially be very quick.


Tips:

  • Instead of ground chicken use diced chicken

  • For an even quicker meal use already cooked diced chicken from the grocery

  • Add a Tbsp of butter after heating the buffalo sauce for an extra yummy smooth flavor


 

Vegan

Serves: 2

Time: 40 minutes

Easy


I love this dish and will sometimes make it for myself for lunch. Don't be afraid of tofu, see the tips for a tip to make it extra crunchy.


Tips:

  • If you have an air fryer you will want to use it! To make the tofu extra crispy cut in squares and make sure it the liquid has been pressed out of it. Toss with 1 Tbsp soy sauce, any seasonings you like, and 3 Tbsp cornstarch. Toss well to coat all pieces and cook in the air fryer at 400 degrees until golden brown.

  • You may use any protein in this dish if you would like it to have meat. chicken, shrimp, beef will all work.

  • If you are not a strict vegan, it is fine to use regular mayonnaise


 

Baked Lemon Tilapia- Damn Delicious

Fish

Serves: 4

Time: 20 minutes

Easy


I'm all about a Sheet Pan meal! This is another quick and easy dish. I'm such a fan of her stuff too!


Tips:

  • To make this a full sheet pan meal add vegetable to the sheet pan and cook until there are only about 10 minutes left, then add the fish to finish.

  • I like to make oven roasted green beans, they only need about a 5 minute head start.


 

BBQ Beef and Beans- Bringing Back Dinner

Beef

Serves: 4

Time: 15 minutes prep/ 1 hour bake time

Easy


This is play on a meal I grew up eating. It is a very simple weeknight meal or an easy potluck meal.


Tips:

  • The bacon is optional

  • Play with flavors by adding things like chipotle, sriracha, etc.
