Easy, Prep-Ahead Ideas for Healthy Lunches
In our home, the biggest struggle isn't dinner—it’s lunch! Especially when it comes to figuring out healthy, quick, and satisfying options that don’t involve standing in front of the fridge wondering what to eat (again). Does anyone else feel this?
Lately, I’ve started tackling lunch with a little more intention. I take one day a week to prep a few meals in advance—some go into the fridge, and others into the freezer for future “grab and heat” moments. It’s made a huge difference in how we eat during the day.
Here are a few lunches that are making the week easier and tastier. I hope they help make your week easier too!
🥪 Breakfast Sandwiches (Inspired by Bon Appétit Magazine)
Breakfast for lunch? That is a yes in our house. I make a batch of breakfast sandwiches using English muffins, scrambled eggs, cheese, and whatever protein we have on hand—bacon, sausage, or even leftover ham. Wrap the sandwiches individually and freeze. Just pop one in the microwave or toaster oven, and lunch is ready in under five minutes.
🍗 BBQ Chicken & Veggies
This one's a go-to because it’s so simple and packs in flavor. Cook your chicken however you like—my favorite way is in the air fryer. Once cooked, shred it and toss with this easy homemade BBQ sauce:
Tip: If you have a KitchenAid mixer, toss the chicken in and set the mixer to 3 or 4; the KitchenAid will shred it nicely.
½ cup ketchup
1 Tbsp Sriracha (adjust to taste)
2 Tbsp brown sugar
1 Tbsp apple cider vinegar
Salt and pepper to taste
Portion the BBQ chicken into containers and add cooked veggies on the side—think roasted broccoli, green beans, or even frozen mixed vegetables. These freeze and reheat well!
🌯 Burrito Bowl
This one’s endlessly flexible and budget-friendly. Mix cooked rice, pinto beans, salsa, corn, shredded cheddar, and optional jalapeños. You can also add avocado or Greek yogurt on serving day for extra creaminess. These are great cold or warm, and easy to make in bulk.
🍛 Curried Chicken Bowl
This is my favorite when I want something warming and flavorful. Take cooked chicken and toss with a simple curry sauce (you can make your own or use a clean ingredient, a store-bought one). Serve over rice or cauliflower rice with a handful of spinach or steamed veggies. This one freezes well and fills you up without feeling heavy. Trader Joe's has some great pre-made sauces, but coconut milk and curry powder work well too.
🍝 Spaghetti and Meatballs
Always good! You can freeze these easily in single servings and reheat them in the microwave or stovetop with a splash of water. Add a side of cut veggies or a small salad for a complete meal.
Meal prepping lunches has helped us eat better, save money, and waste way less food. Plus, I love having lunch already figured out: I forget about it and go on with the week!
