Mushrooms and Dumplin's


Chicken and Dumplin's is served in every grandma's house in the South! Like it or not! I was never a fan, but that's because I have a thing about soggy bread! Ewww! Then I discovered there are dumplin's made with biscuits on top (soggy bread) and then there are genuine dumplin's that once cooked have a pasta like texture, that is the kind I like. No matter the kind, there is something comforting about the smell and flavors, like being wrapped up in a cozy blanket.


Let's try a twist on this comfort food.


We are trying to add more plant based foods into our diet and while I'm not sure I'd call this dish "healthy" it does give us a chance to add in more veggies. We will go with "healthy-ish".


Mushrooms and Dumplings

Serves 4


Ingredients


Base

2 Tbsp Olive oil

10 ounces mushrooms of choice - Oyster mushrooms are great, but sometimes hard to find

1-2 carrots, diced

1-2 celery stalks, diced

1/2 cup onion, diced

1 clove garlic

2 Tbsp all purpose flour

3 cups broth of choice (chicken or vegetable for Vegan dish)

1 cup Coconut milk

1/2 tsp Thyme

4 ounces green beens, chopped in medium sized pieces

salt and pepper


Dumplin's

1 1/2 cups all purpose flour

1 tsp baking powder

1/2 cup milk (sub with water or alternative milk if making as a Vegan dish)

1/2 tsp salt

2 Tbsp melted butter or olive oil


Directions

  1. Heat oil in a pan over medium high heat. Toss the mushrooms in 2 Tbsp flour and a pinch of salt and pepper add the mushrooms and cook until crispy and they are starting to brown.

  2. Once the mushrooms are browned add the celery, carrots, onion, and garlic and cook until the onions are translucent.

  3. Slowly pour in broth and deglaze the pan as you stir it in, scraping the pan to scrape up bits into the broth. Stir in the coconut milk, and thyme turn down the heat and let simmer 10 minutes. It will thicken and reduce.

  4. Make the Dumplin's: Combine the dry ingredients and mix well, then gently pour in the milk (or milk alternative) and melted butter. Stir gently until well combined.

  5. Drop Tbps of the dumplin batter/dough to the simmering broth. Cover and simmer 10-15 minutes until dumplin's are firm. (Don't make them too big or they will be doughy).

  6. Add the green beans to the simmering broth and cook until crisp done, about 2 minutes.

  7. Add Salt and Pepper to taste and adjust thickness of broth to personal preference by turning up the heat a little to thicken and reduce or adding more water or broth to thin.

  8. Enjoy!

  9. PS: Many people sprinkle with parsley. I do not like parsley, but if you like it you may sprinkle some on top as garnish.
