Meatloaf
I love this twist using tomato sauce instead of ketchup and a yummy sweet and sour topping.
Ingredients
Meatloaf
1/2 lb ground beef
1 cup bread crumbs or oats if gluten free
1/2 cup diced onion
1 egg
1/2 cup tomato sauce
Salt and pepper
Topping Sauce
1/2 cup tomato sauce
2 Tbsp mustard
2 Tbsp brown sugar
2 Tbsp Vinegar
1 cup water
Instructions:
Combine the ground beef, bread crumbs (or oats), onion, egg, and 1/2 cup tomato sauce and season with salt and pepper. Mix until well blended. I find that using the Kitchenaid makes for a tighter meatloaf
Press mixture into a loaf pan
Combine the sauce ingredients in a separate bowl and mix well
Pour the sauce over the top of the meatloaf
Bake at 350 f Degrees for 1 and 1/2 hours
Serve with roasted vegetables or a salad
