Healthy Snack – Crispy Green Beans

I am one of those weirdos who forgets to eat sometimes.  Yea, I know, I’ve heard it all.  But, it’s true.  I also really like basically healthy food, which tends to be lower in calories, so I find getting enough to eat and still eat healthy foods is a challenge.  As a result of years of under eating I have had a pretty sluggish metabolism, but that is changing.

One of the first things I have noticed as I have increased -yes INCREASED my caloric intake is that my stomach now growls when I’m hungry!!   This is a good thing and let’s me know my body is speaking to me again!  It thinks I will listen.  I increased my calories but I really only started eating enough to meet my Basel Metabolic Rate (BMR) at first. Your BMR is the amount of calories you need to lie in bed and do nothing but grow new cells and hair, breathe, heal etc.  The next step was to look at my BMR and calculate my PAL, Physical Activity Level, to come up with the amount I would need to eat to maintain my weight.

Since I would like to loose a little weight I then take the BMR plus PAL number and subtract 500 calories. This is an approximate value, but equals 3500 calories which is the scientific amount equal to one pound a week weight loss.  Keep in mind there are many factors which make each person unique, this is an estimate.

This puts me mid range between my BMR and maintaining my weight.  To look at the math check out this link.

This means I have to eat enough to keep me healthy and one of my lifestyle changes is to make more of our snacks rather than purchase them and maybe remember to eat, after all yummy is appealing.

Review: The recipe was easy to follow and the results were yummy, but I had a problem – my green beans weren’t crispy, even after 30 minutes in the oven.  I then read the comments section and found others had the same problem and offered solutions.

My Problem: too much olive oil.  I was certain they would stick more, so I didn’t strictly follow the recipe and tossed my green beans in olive oil.

Solution:  Follow the directions as written

Give this recipe a try, but follow the directions and you will end up with a nice crispy green bean snack.  I recommend this recipe.

The second problem: I ate them all
