Weekly Menu - Week of March 25th. Meal Planning and Recipes

Each week I search cookbooks, magazines, and the internet and plan out 5 main meals. These meals have been tested and adaptations and tips are provided when needed. I'm here to help make Bringing Back Dinner to your home go a little more smoothly with Meal planning and recipes plus tips.

Bowl of Spaghetti




Serves: 2-4 - The recipe says 2, but we always get more servings out of it

Time: 35 Minutes

Easy


If I tell you how many years I've been making this dish you will figure out that I am ummm, not as young as I used to be. Let's just say we moved from how many years to how many decades! It's an easy, quick, and nutritious meal.

Tips:

  • We usually make this as is, but for a little spiced-up flavor try adding chipotle powder or chipotle in adobo sauce.

 

Baja Fish Tacos - Half Baked Harvest

Serves: 4

Time: 25 minutes

Easy


Tips:

  • If you can't find Cotija cheese, Feta works great

  • Any fish will do

  • BIG TIP: use frozen mango!! Game changer!


 

Grilled Pork Chops - Dinner at the Zoo

Serves: 4

Time: 30 minutes + 1 hour marinating time

Easy


We rarely make pork chops, but I love them. My grandmother would make a simple dinner of a Porkchop, sliced tomatoes, and Navy beans and I thought it was the best. Sometimes she would make mine BBQ Shake-N-Bake as a special treat, I can smell it just thinking about it! That's right, aging myself again!


 

Spaghetti Bar

Time: 30 minutes

Easy


A fun and easy spaghetti meal that we like to do is a spaghetti bar.


  • Cook the pasta according to the directions on the package place in a large bowl and add a little olive oil to keep it from sticking

  • Saute peppers and onions and put in a small bowl

  • Saute mushrooms and put in a small bowl

  • Saute Zucchini until golden brown, but still firm and put in a small bowl

  • Cook sausages or meatballs and put in a small bowl

  • A bowl of shredded cheese

  • Heat your favorite sauce

    • I like to make this one from Hugh Acheson but you can also use your favorite recipe or a jar.

Set the table with the bowl of spaghetti and the small bowls of toppings and let everyone help themselves. Works great as buffet style on the counter and we've even done it in the back yard picnic style.



 

Broccoli Cheese Studel - Mooswood Café & Washington Post

Serves: 4

Time: 1 hour

Moderate - Not really but Phyllo sheets can be intimidating. Don't fear it, just drive right in!


Tips:

  • Take your time and don't fear the Phyllo sheets
