A simple and delicious way to enjoy sweet Vidalia onions, this baked dish is rich, flavorful, and perfect as a side for any meal.
Ingredients:
4 large Vidalia onions
4 tbsp unsalted butter, divided
1/2 cup shredded cheese (cheddar, Parmesan, or Gruyère work well)
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder
1/2 tsp fresh thyme or parsley (optional, for garnish)
Instructions:
Preheat Oven: Set your oven to 375°F (190°C).
Prepare the Onions: Peel the onions and slice off the top and bottom so they sit flat. Use a small knife or spoon to hollow out the center slightly, creating a small well.
Add Butter & Seasoning: Place each onion in a baking dish and add 1 tbsp of butter into the well of each onion. Sprinkle with salt, black pepper, and garlic powder.
Bake: Cover the baking dish with foil and bake for 35-40 minutes, until the onions are tender.
Add Cheese: Remove foil, sprinkle cheese on top of each onion, and bake uncovered for another 10 minutes, or until cheese is melted and slightly golden.
Garnish & Serve: Sprinkle with fresh thyme or parsley and serve warm.
