Fresh Foods Challenge!
I challenge you to 7 days of eating more fresh foods!! Why? because it's good for you and that's what Wellness Monday is all about! Plus Summer starts in June and all those yummy foods are ripe and ready to enjoy! Let's dig in!
I have 7 foods for you to add to your meals this week. I'll give you a few recipes to help, but first let's talk about the benefits of each one.
Peaches
Great source of antioxidants and, Vitamins A and C and supports your immune health, eye, and digestive health.
Great in smoothies, salads, desserts, and even in sauces with meats, and soooo good when they are drippy and have to be eaten over the sink!
Cucumbers
Contains vitamins A, C, K and B vitamins along with carbohydrates to provide you with healthy energy.
Great in sandwiches and wraps, salads, salsas, and as a snack.
Mango Cucumber Salsa, Tip: Use frozen mango it is so much easier!
Watermelon
One of the most hydrating foods! Packed with antioxidants to support heart and eye health.
Great by itself, in salads, smoothies, and grilled
Tomatoes
Has antioxidants and Vitamin C to increase immunity and protection against diseases and cell damage.
Great in salads, sauces, sandwiches, salsa, wraps, and soups
Must have recipe!! Basic Tomato Sauce - This is from a can, but It's too good not to add.
Berries
Packed with nutrients and has magnisium, fiber, vitamins C and K, They are anti-inflammatory due to containing so many antioxidants.
Great in salads, sauces, smoothies, and as a snack
Avocados
Has antioxidants helping you eye health, heart health, and immunity. A good source of folate, potassium, and vitamins C, A, K1, and B6.
Great in salads, sandwiches, smoothies, as a spread, and of course guacamole.
Grilled Avocado - Seriously, it's good!
Green Beans - That's snaps to us southerners
Helps fight inflammation and a good source of folate and potassium, plus vitamin C.
Great in salads, soups, and roasted.
