Roasted Beet & Bacon Flatbreads with Feta, Thyme & Ranch Drizzle

With a plant-based coconut bacon option and smoked balsamic magic.


These flavor-packed flatbreads balance smoky, creamy, tangy, and sweet elements in every bite. Roasted beets, bacon (or coconut bacon), herbed cheese, and fresh arugula come together in a cozy, craveable combo.


Ingredients:

  • 2 store-bought flatbread crusts (naan, lavash, etc.)

  • 2 medium roasted beets, peeled and sliced or cubed(Golden beets bring a slightly sweeter note if you’d like to switch it up!)

  • 4 strips cooked bacon, chopped(or coconut bacon—see below)

  • 1 shallot, thinly sliced

  • 1/2 cup Boursin cheese

  • 1 clove garlic, minced

  • 1/4 cup grated Parmesan cheese

  • 1 tsp fresh thyme leaves (or 1/2 tsp dried)

  • 1/3 cup crumbled feta cheese (added after baking)

  • 1 handful fresh arugula

  • 1 tbsp smoked balsamic vinegar(or 1 tbsp balsamic + a few drops liquid smoke)

Optional Boosters:

  • Cracked black pepper or

  • red pepper flakes for kick


Instructions:


1. Roast the Beets Preheat oven to 400°F (200°C). Wrap whole beets in foil and roast for 40–50 minutes until fork-tender. Cool, peel, and slice or cube.

2A - Cook bacon until crispy if not already done.

2B - Make Coconut Bacon (if using): Toss together:

  • 1 cup unsweetened coconut flakes

  • 1 tbsp soy sauce

  • 1 tsp maple syrup

  • 1/2 tsp smoked paprika

  • A few drops of liquid smoke.

  • Spread on a baking sheet and bake at 325°F (160°C) for 10–15 minutes, stirring once, until crispy.

3. Make the Cheese Spread In a small bowl, combine Boursin, minced garlic, thyme, and parmesan cheese until smooth and well mixed.

4. Assemble the Flatbreads Preheat oven to 375°F (190°C). Lay flatbreads on a baking sheet. Spread the cheese mixture over each crust. Top with roasted beet slices, chopped bacon (or coconut bacon), and shallots.

5. Bake for 10–12 minutes, until heated through and toppings are hot.

6. Finish & Serve Top each flatbread with crumbled feta, fresh arugula, a drizzle of smoked balsamic vinegar, and ranch dressing.


Slice, serve warm, and enjoy the delicious contrast of textures and flavors!
