🍁Spiced Maple Cashews
Ingredients:
2 cups cashews
1 ½ tbsp olive oil (or neutral oil)
2 tbsp sugar (raw or turbinado)
1 ½ tsp pumpkin pie spice
A pinch of cayenne pepper
¼ tsp salt
1 tbsp maple syrup
Instructions:
Preheat oven to 350°F (175°C).
In a bowl, combine the cashews, olive oil, sugar, pumpkin pie spice, cayenne pepper, and salt. Mix well until the cashews are evenly coated.
Spread the mixture on a baking sheet lined with parchment paper or a non-stick insert.
Bake for 10-15 minutes, or until the cashews are golden and fragrant.
Remove from the oven and drizzle the maple syrup over the cashews. Toss to coat evenly.
Top with additional sugar, spice, or salt if desired.

Cozy Fall Aromatic Blend
5 drops Sweet Orange essential Oil
2 Drops Ginger essential Oil
1 drop cloves essential oil
2 drops cinnamon essential oil
Combine drops and add to your favorite diffuser or a small pot of simmer water.

DIY Pumpkin Spice Sugar Scrub
Supplies: ½ cup sugar, ¼ cup coconut oil, 1 tsp pumpkin pie spice, ½ tsp vanilla extract (optional).
Instructions: Mix all ingredients together in a small bowl until it forms a scrub consistency. Store in a small jar, and use it as an exfoliating body scrub to leave your skin soft and smelling like fall. Tip: Leave by the bathroom sink to keep soft hands.
It wouldn't be right to skip Pumpkin Spice Latte!
Homemade Pumpkin Spice Latte
Ingredients:
1 cup milk (any type—dairy, almond, oat, etc.)
2 tbsp pumpkin purée (canned or homemade)
1-2 tbsp sugar (or sweetener of choice)
½ tsp pumpkin pie spice (plus more for garnish)
½ tsp vanilla extract
¼ cup strong coffee or 1 shot of espresso
Whipped cream (optional)
Instructions:
In a small saucepan over medium heat, whisk together the milk, pumpkin purée, sugar, and pumpkin pie spice. Heat until hot, but do not boil.
Remove the saucepan from heat and stir in the vanilla extract.
Pour the mixture into a blender and blend until frothy, or use a milk frother for extra foaminess.
In your mug, pour in the brewed coffee or espresso. Slowly add the frothed pumpkin-spice milk mixture on top.
If desired, top with whipped cream and a sprinkle of extra pumpkin pie spice or cinnamon.

I was never a fan of chicken and dumplings until I had a good dumpling. It turns out I just don't like soggy bread! Dumplings prepared properly will not have a mushy wet texture. And dumplings don't have to be just for chicken!
Tips: Trader Joes makes a great Umami seasoning, mushroom powder that you can use in place of making your own powder as suggested in the recipe. Feel free to use any broth you choose.

Tip: The recipe is in grams, but you can use 1 can of each bean if you don't have a scale. I usually prepare dried beans in the pressure cooker and use those. Chef's choice.

🥄Easy Buddha Bowl
Ingredients:
1 cup cooked quinoa or brown rice
1 cup mixed greens (spinach, kale, or arugula)
½ cup roasted sweet potatoes (or other roasted veggies)
½ cup canned chickpeas (rinsed and drained)
½ avocado, sliced
1 small carrot, shredded
2 tbsp hummus or tahini
1 tbsp olive oil
1 tbsp lemon juice
Salt and pepper, to taste
Optional: sesame seeds, chopped nuts, or microgreens for garnish
3 Tbsp Mayonnaise
1-2 Tbsp Sriracha sauce
Instructions:
In a bowl, layer the cooked quinoa or rice, mixed greens, roasted sweet potatoes, chickpeas, avocado slices, and shredded carrot.
In a small bowl, whisk together the hummus or tahini, olive oil, lemon juice, salt, and pepper to create the dressing.
Combine the mayonnaise and Sriracha sauce, and 1 Tbsp water until well blended. Add Sriracha to taste.
Drizzle the dressing over the Buddha bowl and then drizzle the Sriracha sauce and garnish with sesame seeds, chopped nuts, or microgreens if desired.
Serve immediately and enjoy a quick, wholesome meal!
